I've got a Kitchen prep knife up for sale today. It's 0.09" AEB-L steel heat treated by Peter's to RC61. It's a full flat grind that's satin finished to 600 grit with a cork belt. The handle is stabilized Maple Burl, blue G10 liners and black micarta pins.
Specs:
OAL: 8.75"
Blade: 4" long, 1.125" wide, full flat grind, satin finish with 600 grit cork belt. Edge down to 0.005" before sharpening.
Steel: 0.09" AEB-L heat treated by Peter's to RC61
Handle: Stabilized Maple Burl, blue G10 liners and black micarta pins.
