This design is an all-around favorite in home and professional kitchens alike. Ground from 1/8" thick AEB-L, HT'ed to 60Rc. 13" overall with a classic European shape. Full-flat grind with a mild distal taper, crowned spine for comfort and a Scotchbrite finish for easy maintenance. Near-zero edge with polished micro-bevel; this knife is built for precise slicing and cutting, not chopping heavy bone or wood. The scales are desert tan G10 with black G10 liners. No sheath.

*why AEB-L razor steel? Because it is very fine grained, which makes it easy to put a very, very crisp fine edge on it. It also happens to be quite stain-resistant.

James,

Payment just sent for knife "C". Looking forward to getting it after all the glowing reports on the chef's knife that you did for the pass-around.

Awesome, thanks! We've tested it gently but thoroughly in our own kitchen and we're quite pleased with it :)

There will be more...
