Nice review. I've just recently started thinking out of the box for kitchen knives. My Henckels have served me well but now looking for a little more design and a little more performance.
 
I've got a Cook's knife and a Cook's companion, both in 10V. You can't really understand how well the knife performs until you use one.
To gain some perspective on how good of a knife it is, three different people have used my Cook's companion and they bought one. These are people that never dreamed of spending more money on one knife than their whole set of kitchen knives.
Big Chris definitely knocks his kitchen knives out of the park. It has been a game changer for me. They cut/chop well, easy to maintain the edge and the ergo's are comfortable to use for kitchen work.
