Fiddlebacks and Food

I love the Larch. Autumn in Montana was pretty spectacular when they turned yellow and dropped their needles on the high ridges. k

So when I found a tiny one for sale in a local farmer's market 15 years ago, here in Western North Carolina, I grabbed it. It's now about 20 feet tall, and pretty beautiful.

Didn't you hear!? This thread got unofficially renamed to "Fiddlebacks and Cuttingboards, and sometimes trees". Still waiting on the official name change!

Haha, kidding aside! I'm always taking pictures of my food, but I never have a Fiddleback in them. I'll change that and start sharing more on here.

Osage prime rib

First use the kephart to trim up a little and just add kosher salt and cracked pepper. No need to add anything fancy.

Looks good enough to eat. Gacho needs a little more blade length. Need to find a Padre.

That looks amazing... does that controller adjusts heat and timer and did you whip it up itself?

It has 2 temperature probes and a fan. One probe for the food and the other for the pit. It uses a PID controller based on the pit temperature to adjust fan speed to keep the pit temperature stable at the setpoint. It's based on a raspberry pi but I built the interface board and did all the programming. As you can see it's wifi capable so I can control it via my smartphone from anywhere. As an added feature, since it's a raspberry pi I can use Pandora and listen to whatever music while I cook.

Dang a pit PID controller that's very impressive ... programming raspberry pi is definitely a knowledge gap that I want to fill... seems so versatile

Kephart pulled grilling duty tonight. Trimmed up a bone in pork rib roast and cut it into manageable sized pieces after it was cooked.

wow. great pics everyone. NOLA, that controller is way cool.

Three different types of smoked meats that were great but the best thing on the plate was the gouda mac n cheese.

Love the Bushboot and I'd be all over a plate like that. I get to Gatlinburg once in a while - mind sharing where this was at?
