I'm ready to start offering 3V steel as an option. I have a small amount of 5/32" thick by 1" wide and some 3/16" thick by 1 1/2" wide 3V steel on hand. My wait time currently is 6 to 8 weeks.

How does A2 compare to 3V with field sharpening?

A2 is going to be easier to sharpen. It's doesn't have the wear resistance 3V has. With diamond abrasives, 3V shouldn't be all that hard if not left go too long. Regular touch ups. I recommend diamond abrasives for any knife.

Also do you do scandi grinds on the polaris? I just placed an order for the standard edge one but was wondering for future reference.

I had a Koster in 3V and it sharpened up just fine with sand paper and a strop. You shouldn't have too much of an issue with it IMO.
 
I have a brkt in 3v and it has given me no trouble at all sharpening. Pretty damn near stainless too
 
I agree, 3V is excellent. A little more work to sharpen but not that much and it stays sharp a LONG time!
