While working in my daughter's garden, I found her first SAK somewhere in the garage. It is amazing to compare with the Sheffield couterparts and her son's more recent rendition.
I won't speak for everyone, but I do for a couple of reasons. First, knives are my hobby, so it hardly breaks my heart to have a couple different knives that I enjoy in my pocket.
The other reason is added capability. Modern, one hand opening folders are super handy for most general cutting chores. No need to set down what you need to cut, just snap them open, cut, and put away. That said, the added tools on an sak or multitool can make a lot of little jobs that pop up extremely simple to deal with without needing to go to the tool box after a more specialized tool than a knife blade.
Personally, I usually edc a multitool or sak, plus a one hand opening folder with a largish, stout blade and a handle shape that helps prevent slipping onto the edge doing hard cutting in wet conditions. A lot of people won't have the same needs, but it gives me what I consider well rounded capability in what I do day to day.
I just met a guy that said he keeps two knifes on him so that he can have one that is razor sharp and one that has a more durable utility edge. I thought that was a good idea.
