My latest offering is a Nakiri made from 52100 carbon steel that has been cycled and treated to approx 60-62 HRc.
This is a thin full flat ground knife taken to 0.005" before sharpening with a 15 DPS secondary bevel.
The 5.75" blade has a hand rubbed satin finish and a balance point just above the choil area.
The handle is constructed from Black Gabon Ebony, a very dense durable hardwood that does not require stabilisation. Complete with red and black G10 liners, stainless corby bolts and a brass mosaic pin.
OAL- 11.25" (285mm)
Blade length- 5.75" (145mm)
Blade witdth- 2" (51mm)
Thickness- 0.08" (2.1mm)
