This Santoku knife is one I have been using for the last month or so. I'm either cooking or help cook on Wed. nites at Church and I have used this knife to go through a lot of Tomatoes and other veggies! It has started developing a beautiful patina.
The new owner can choose to keep the patina or I can hand sand it back to a satin 600 grit finish, totally up to you.
Blade is .084 52100. THIN and SHARP! It's lightweight and holds an excellent edge!
