Good evening everyone,
I've got one of my Euro Chef's up for sale here today. With an 8" blade it's a great all around kitchen knife and should be a workhorse for you. AEB-L steel at RC62 is great all around steel combining good edge retention, corrosion resistance and ease of resharpening. The curly Tasmanian Blackwood is absolutely beautiful and was stabilized by K&G. Thank you for your consideration.
SPECS:
OAL: 13.0" (330mm)
BLADE: 8" (200mm) long, 1.9" (48mm) heel height. It has been hand finished to 600grit. The grind is hybrid full flat/convex which is down to 0.008" before sharpening.
STEEL: 0.10" (2.5mm) AEB-L stainless steel heat treated to RC62.
HANDLE: K&G Stabilized curly Tasmanian Blackwood with black and white liners and black micarta pins.
