I have these two chefs knives available.
The 8 inch classic chefs knife is .093" thick hand rubbed AEB-L, cryo'ed and tempered to 63hrc.
The scales are black C-tek with thin red liners over black G10.
It has a very "supercar" sporty kinda vibe. If I didn't hate cooking with the white hot intensity of a thousand suns I'd probably keep this one.
The second offering is a 7 inch blade. Also in AEB-L, hand rubbed, cryo'ed and 63 hrc.
Also .093" thickness. I also rounded the spine from the scales forward.
This one sporting some Raffir Noble scales.
My poor photography skills can't capture the 3-D effect this scales have in person.
