Anyone know what steel is used in Henckels Four Star line?

I'm getting really tired of reading "high carbon stainless steel." Just tell me what it really is for crying out loud! Does anyone know exactly what steel is used in the Four Star brand of Henckels?
 
European knives, traditionaly use X50CrMoV15 (for thier higher models) and X45CrMoV15 (for thier budget models). I'm guessing the german made Henckles are made with one of them or some variation of it.
 
henckels uses x45CrMoV15 in their four star line which is basically equivalent to 440a stainless and is actually not high carbon steel. High carbon steel is steel with a carbon content of more than .5% carbon, the "x45" means .45% carbon. If you want a good german knife go Messermeister, they are higher quality and cost less.
 
It is the Japanese who use hard steel in kitchen knife manufacture. There is no production kitchen knife made in the West that can compete with the Japanese knives. I would recommend rethinking from the ground up.

If you like Henckels, but with a Japanese flavor, why not try "Henckels Twin Cermax." ;)
 
I just purchased an 8" Henckels INTERNATIONAL Classic blade, for around $40 with a 20% off discount at Bedbathbeyond, and the blade states

X 50 CR MO V 15

It seems well balanced and cuts well. edge retention time will tell.

This is not one of the higher levels of the Henckels brand, but a great knife if you want one that wont break the bank.

I agree totally. If you know how to use a knife properly... Japanese is the way to go. Buying a Henckel is like owning a Mustang. It's a fun car and will work fine... but everyone will own one and it's far from the best sports car out there.
