Asymmetrical bevel, can I use the Sharpmaker?

Hi,

I have 2 Japanese kitchen knives with asymmetrical bevel. Can I use my sharpmaker to sharpen them? If I can, how do I do it? Thanks.
 
You can, but depending on the angle, it may take awhile to do so. You can use the sharpie method to determine what the existing bevels are in relation to the 30 and 40 degree angles of the sharpmaker.
 
Yes, only sharpen the bevel side, either angle should work depending on how the knife was originally sharpened. You'll probably be able to use the 30 degree setting, sharpen the bevel side like a normal knife, only sharpen that side. Lay the flat/concave side flat onto the stone and make one pass (pulling straight back, not heel to tip like normal sharpening) to remove the burr that forms. Eventually you'll want to do a proper resharpening on the whole bevel, but the sharpmaker will work for quick touchups to keep the blade cutting well between proper resharpening.

If it is chisel ground. I guess it would help us to help him if OP gave a bit more info on the knives.
