Brewery knife?

Someone sent me a picture of a knife their neighbor is making that is modeled after something used in a brewery. Looks more or less like a cleaver. They were curious what the knife would be used for. Any ideas?
 
I worked in a brewery for couple of years: I do not recall any special process which would involve anything out of ordinary, requiring special knife. That was a modern brewery though. For a small old one: still can not even come up with any suggestions for what it would be hypothetically.
