I also make a suggestion for a Mora, specifically one of the carbon models, not stainless steel.
They may not be the prettiest knives out there, but they are super cheap. So if you decide you're not really into knives enough to spend $100+ on one, you're only out a couple bucks with the Mora.
Also, being that it is a scandi grind knife, it will help teach you how to properly sharpen a knife. The large flat bevels are easier to feel that you have the right angle on the stone than knives with secondary bevels.
Of course, if you really get into knives, you next one can always be a more expensive one with nice wood handles, and whatever grind you find you like, but at least having started with the Mora you'll have learned how to keep your new, expensive knife sharp.
Also, I suggest getting a carbon blade, because it will teach you how to take care of a knife, and that it is not just something you throw in a box or draw when you get home.
