A design that will keep the knuckles off the cutting board and has a nice sharp point. The blade tapers all the way from the index finger to the tip and a steady (distal) taper from the spine to the edge. I round the top of the spine for folks who like to choke up on their knives.
1095 high carbon steel (in my humble opinion this steel slices better than most, holds a good edge and is easily sharpened)
Heat treated in a digitally controlled furnace with three normalizing and two tempering cycles to a hardness of Rc 58-60 and producing a fine grain structure
Flat grind
Stabilized ambrosia maple handle with a palm swell and flats for fingers 3 and 4. Comfortable and easy to controll.
Overall length: 13 1/2 inches
Blade: 8 3/4 inches long and 2 inches deep at the index finger
