My dad has one of these and hes uses it for all his kitchen, fishing and his buck folders. He can shave hair with the folders so Im sure it works. My SOG trident is getting dull and I tryed to sharpen it on the 310 but I could not get it sharp and it might be even duller. I know Im a noob but damn I cant even use an electric sharpener. Any advise on this? Thanks

Id say I agree but I have watched my dad sharpen with it to the shaving point. Im not saying its great but thats all I have and I wanted to sharpen my knife.

It may work OK for thin kitchen knives, but a whetstone or one of the jig-type sharpeners will work much better.

That's because electric sharpeners don't work.

The Chef's Choice 310 is an orbital type sharpener, and it does indeed work very well on thin knives, as you said in your next post. I've got a Chef's Choice model 120 3-stage rotary sharpener, and it will do a sastifactory job even on fairly thick folders and hunting knives. While I agree that most electric sharpeners are best used as door stops or paper weights, the Chef's choice sharpeners are relatively fast and effective -- plus it's easy to learn how to use them. My 120 will never replace my EdgePro, but it's the only tool I pack when I go to the in-law's to sharpen a drawer full of dull kitchen knives.

The edge on the SOG is likely far too thick and obtuse, you will want to regrind a relief to the edge first with a x-coarse hone to make sharpening efficient. This just makes take the stone or file and sharpen at about 15 degrees per side until the edge forms. You can then use whatever you want to sharpen it.
