Chef's Line Knife - 61-62 RC Nitro-V

I'm working on a group of Chef's Line Knives in 61-62 RC Nitro-V Steel.

These are 8" overall with a 4" blade in .111" stock.

I was a Chef before I started knifemaking and this size knife is very versatile, we would keep one on the line during service for just about any task at hand.

I'm testing the fit on Corby Bolts in the pics...

I'll be asking $185 base price once these are done. www.fairlyknives.com

Looks like something my wife might be needing for Christmas are they going to be ready by then? Nice to see you on Bladeforums again Daniel.:D

I have a few that should be ready by Tuesday if all goes well.

...After that they will be a ways off but certainly before Christmas. I have a large group in the works but am undergoing eye surgery and about to be out for a while.
 
Nice - I have one of your tall chef's line knives from back in 2017 and love it but the handle (choil to end is ~3 5/8") is just a bit too short for me - wdyt? edited to add - Great to see you back and good luck with the surgery!

This design is probably pretty similar but the extra handle length on the newer one will go a long way.

These being a Japanese influenced design work great with a pinch grip. That puts the balance point right where you pinch making it very controllable/balanced. For a hammer grip an American style handle works well, I oddly use a pinch on either.
