Chicago cutlery steak knife

I bought 8 103s steak knives to either rehandle or repurpose into ??? Attached are pics of the blade after flat grinding and an original. These older knives were made from 1095 and take a razor sharp edge.
The original handles were thin walnut with a full tang. The handles are too small so I thought I would add new scales. As you can see the lower edge is contoured for a better grip. I'd like to remove the lower edge and square it up so I could make the blade tang uniform. Then I would route a recess into the handle scales, epoxy the handles together and shape to fit.

I have made and sold wood carving knives but this repurpose is new to. Is this too much work for the end result ? I'm retired so time is not an issue.

Im retired as well and spend a bunch of time on stuff like that. And I have 4 of those knives on the counter,.......hmmmm.
