does a highly polished stainless steel prevent adhesion of*tar. I am trying to come up with a solution of a pure metal preferably without a coating that prevents tar from sticking to it. titanium nitride definitely didn't work.

Not in my experience in cutting things that have types of tar and adhesives in them.

basically I work with her a lot and the blade gets gunked up constantly, I am trying to minimize the effort of cleaning it as often

Try using NuFinish car polish on the blade regularly to try to prevent some adhesion. And buy a can of that Bug 'n Tar Remover at the O'Reilly's and I'd think that's about the best you can do.

If you want to spend a little more maybe experiment with Renaissance Wax or Eezox for more of a coating...I'm not sure though.

Have you tried just wetting the blade often during the work ?

The higher the polish, the less adhesion it will have. But tar sticks to everything! Wax, Teflon, or oil will help keep it from sticking, and WD 40 will remove it. I don't think anything will totally keep it from sticking.

what about minimal adhesion compared to normal blades

Nope! Disposable razor knives might be your best option.
