What are the pros and cons of using edge coating? Does it have it's place or something you never use?

As far as I'm concerned, there's no pros to using edge coat on you edges. There's many negative discussions about this type of finish. You can just sand your edges to your desired grit, dye, and then burnish with saddle soap and water, or, some like a product called: Wyo Quik Slik from Barry King. I believe Dave (Horsewright) drinks this stuff by the gallon.

Some folks use Edge Coat and seem to like it. I am definitely not in that group. Edge Coat is really much akin to paint and I don't want that kind of finish on my nice smooth edges, I've worked hard to get that way.

Thanks for the feedback. I know good edges are key to having a "completed" piece. I haven't been at this very long and would like to get started the right way.

I don’t use edge coat.

What I do, though, when I get a new knife is polish the liners, frame, and blade with a Teflon lubricant using a Dremel jewelry polish bit, then again with a quality oil (Daiwa Reel oil, Hoppe’s no. 9), and one last time with Tuf Lite.

You need a steady hand and minutiae, but it protects against corrosion.

Biggest cons are how messy sharpening gets, and needing to wipe the coated surfaces frequently with a microfibre cloth to keep the polish looking its best.

The question is about edge coat, for finishing exposed leather edges, when making leather sheaths. I think you missed the point behind the question or that it’s posted in the sheath making section.

Yep don't use that stuff. There are many ways and techniques for getting good edges. Edge Coat isn't one of them.
