If I want to sharpen my 8 at what degrees should I set the stone. (the angles of the two sides of the blade appear different.)

Also use a black sharpie and mark the edge of the blade. Then set your angle so your sharpening from the edge back you’ll see were your sharpening stone is hitting much easier . Also as AusLoX AusLoX mentioned it’s a chisel edge so sharpen the side with the steeper angle and just knock the burr off the other side .

On the cqc8 only sharpen the side with the Emerson laser etching on the blade.

25-28 degrees works for me. Use sharpie to verify the factory edge if that's what you desire to achieve.

No sharpening on the reverse side of the blade - use a fine stone and lay flat on the v grind to knock off the burr. Light strop and you're done.
