Farm Knife and Farmcata uses?

Ok, so I was gonna braise some deer shanks, but they were a little too long. So, I decided to pull out the farmcata (farm kata), instead of a cleaver, to cut off the bottom part of the bone. It definitely wasn't made for that. There are both chips and rolls. I know bone is tough, but I had to see if this could be a cleaver replacement for tough jobs. It's definitely not meant for that. Time to fix it up.
 
Yes, the farmcata and farm knife have a relatively thin edge. I suppose if the heat treat is perfect it will survive a bone chop, and many HI knives do have a great heat treat, but you have to risk the edge in order to find out.
 
A few weeks ago I made some ratatouille and (vegie) moussaka and the large egg plants I used didn't stand a chance.

Thanks for the warning about the bone chopping fail :( i'll keep that in mind!
