First time skinning knife, with fingerhole

hi, my first post...i found this site looking for some help with a knife!!

this knife was a gift, and a cheap Jack Pyke knife that didn't really have an edge at all to speak of. trouble is it is the most comfortable size and type wise.
got my local diy shop to sharpen it and it is better but i dont think i will ever get it razor sharp.
that said i am looking for a similar knife, max size about 5-5 1/2" with a blade about 2 3/4" with a finger hole. trouble is over here in the uk i cant get anything from ebay and i havent been able to find any similar advertised on the internet from any uk supplier. this is the closest type of blade i have found and i would be happy to try to make my first knife, if i can find a decent blade similar to it that i can buy in the UK.

also what is the best type of metal...for a skinning/gutting knife, i dont mind sharpening often as long as it gets a razor sharp edge. i have heard of the stainless 440 and 420 which seem to be the basic ones????

any and all advice welcomed!!!
