Folding Knives For Kitchen Use?

Any members routinely use a folding knife for food preparation either in the kitchen or in commercial food preparation? If so what makes and models of knives?

From a mention or two I suspect that Opinels may be some of the commonest folding knives that are regularly used for food prep due to their thin good quality carbon steel blades available at a reasonable price.

Only if I'm at someone else's place helping with food prep and all their knives are dull or they just don't have enough knives. I always keep my own kitchen knives sharp.

I hear some people like the benchmade onslaught...I have the mini and I love it:)

Spyderco Military is the best folder I have ever used in for food prep. No question or contest.

I will second this, my lady loved my M390 so much that she kept it in the kitchen for a very long time. Just recently got it back. it is great in this role.

Not often but every once in a while, my Rock Lobster sees a bit o' kitchen duty... :)

Routinely? No.

Why use a knife not specifically designed for food prep when there are a ton of very, very good knives that are specifically designed for food prep? That's the way I look at it. Sure...a good folder may better than a junk kitchen knife for food prep in a pinch....but it's not better than a good kitchen knife for food prep.

Spyderco Endura 4 ffg and a ZT 0700. ZTs blades are actually thin for great slicing. I use my folding knives because the knives at home are dull and my parents never sharpens them at all. I don't know how they can do food prep with dull knives but I can't.

I use my pocket knife sometimes when I'm out with the family and need to cut some food for the kids, but generally I like fixed kitchen knives because you can actually get them clean.

I use my Griptilian, when my Tanto Lite is unavailable. It's been with a friend of mine getting a custom leather sheath.

I travel a lot and generally spend a good bit of time away from my house, so my pocket knives get used for food prep quite often. I use whatever I happen to be carrying at the moment. Knives with flat ground blades that aren't too thick work best; like a Spydie Military, FFG Endura, Benchmade Onslaught, Opinel, etc. On trips, I usually save my SAK for food duty.

A.G. Russell had a folding cooking knife that was quite interesting. I don't know if it's still available.

Camping yes. At home no.

Carving knife, chef's knife, paring knife, bread knife, and a Santoku knife are my wife's domain. I bought them for her and she loves them. And I love that she loves them. She is a great chef and incredible with the baked goods. Oh yeah, a Cleaver is handy too.

As you said, I use an Opinel quite often in the kitchen. Sometimes I take out my Vic Farmer when at a restaurant, but only when their knives are dull.

I forgot to mention the Kershaw junkyard dog works great for food prep, it also shares the blade shape of a santoku.

Yeah, camping but sometimes at home. Grohmann has some folders with a high carbon stainless blade that have just the right features other than an opinel-like thin blade. Have a look at the #300S or the smaller #340S to see what I mean:

I think the 340 could be used anywhere and not scare the sheeple because of it's overall appearance and use it as one of my EDC's, but the ergonomics of it for repetitive kitchen use are great.
