Mondongo you surprised me with that . Parents haven’t made that in a while . I won’t even attempt to make it . Last time I had mondogo with white Rice I was in San Juan PR .
If you saw where I grew up, Sunset Park Brooklyn in the 80s you would think it's pretty normal! It was a cool place. One section was Irish, Italian and German and then the other section was entirely Puerto Rican. We were all friends and our mom's would feed whoever happened to be around.

What I remember most about that dish was that it was the first time I had ever eaten those oddball ingredients in a dish outside of my own culture so it made me feel normal. Most of my Puerto Rican friends wouldn't touch it though, lol. Nothing like sitting under a tin roofed snack shop hanging around Luquillo beach. I used to do that trip a lot when Jet Blue first came out and was doing airline ticket wars. If you weren't pick you could get to San Juan for $150 round trip so I would go for the weekend, I would make the cost of my whole trip by playing $5 black jack tables at the casinos.
 
Here's a homage to New York City of old when all the push carts were run by Greeks and you were blessed if they sold $1.50 shish kabobs grilled over charcoal.

I used pork belly instead this time. The go to topping was always hot sauce and Kraft BBQ sauce on the souvlaki! Just heaven!
