Actually I'm close to the organizator of this tournament (French open II will occur on March 23rd in Paris), and when, last year, artistic forms started to really gain fame here in France (well it was not new, Frenette had already done a revolution in Bercy 1990), we worked on rules, I interviewed US champions etc. and I was surprised not to see any balisong in the weapon forms.
Actually, if you take a bright steel big balisong (or two), it can be as flashy as a nunchaku or kamas (I thought). But it seems that a balisong is too small, comparing to the other weapons, bigger so more impressive for the referees.
BTW, artistic form being a place of creation, I'm sure one day someone will decide to be different with a balisong, so different from the actual kama fashion.
