These are not the same as the one in the OP's video. On that one, you hold on to the middle section, which is also the one that would end up on the outside and serve as the handle when the knife is opened. The Cold Steel version would be more similar, but the one in the OP's video seems like the best version IMO.Design's at least 100+ years old. I can't find a picture of the oldest German versions, but here are some pre- WWII US versions -

In the US, it tended to be a design used for knives that might need a deep cleaning. The downside is you'll cut it the handle frame and dull the knife if you try to open them fast, as mentioned.
