Hayley`s Stuffed Baked Potatoes

My 11 year old granddaughter, Hayley, made these for us tonight, they turned out great!

Ingredients:
4 large baking potatoes
1/2 can baked beans
2 stalks green onion
4 oz grated cheddar cheese
3 tsp softened butter
salt and pepper

Cook the potatoes in either the oven at 400, or in a microwave until soft, let cool.
Pour the baked beans in a mixing bowl, add chopped onions, a pinch of salt and pepper, and half the cheddar cheese.
Cut each potato in half, and scoop most of the potato from the skin into a bowl.
Add the scoopings of potato to the baked beans, and chopped onions, and mix in the bowl with butter.
Use a spoon to fill the potato skins with the above mixture.
Sprinkle the rest of the cheese over them and bake for 20 minutes at 400.

These are really tasty!

This reminds me of a port call to Liverpool, England back in '78 when I was in the Marines & a restaurant that served giant stuffed potatoes.(football sized potatoes :eek:)
Me & a buddy found the place while doing the tourist thing and boy were those stuffed potatoes good, especially washed down with a pitcher (or two or three) of Sangria.

We met a guy from Harrisburg,Pennsylvania taking his mom on a vacation in that restaurant too.

Ahh,the good 'ol days.

Also good with bacon bits sprinkled on top, or even with chili beans. This little girl loves to bake and cook, she has a talent!

We might have to try a campfire version at The Gathering.

I was thinking this - maybe make them up and wrap the stuffed taters in foil to lay about the fire side.....

Yum - I want one now!!

You know, one COULD put some bacon in them too.......
