Hickory knives

I'm looking to get more into blade polishing, handle making, re gringds etc. Still want to have a functionlal knife afterwords. I've seen the hickory line for relatively cheap. What do you guys think for tinker. Butcher knife is full tang, 53 to 58 hrc, 1095, USA made.
 
Lots of threads for modified Old Hickory knives. Butcher knives lend themselves to mods well. I've done 7" to 14 ". Made two knives from 14" models. Cheap, fun projects.
 
I modified an Ontario Field knife for use in the kitchen. Pretty much use it every day now. My son liked it so much that I modified one for him.

If you need to drill holes in the tang, you may have to anneal the area you are drilling.
