how sharp do you keep your knife?

I just use mine for everyday chores so its not "that" Sharp but i would say more than enough for what I put it through and I sharpen it about once every other week
What about you guys? Do some of yall have it basically like a straight razor for edc? And how many times do you "touch" it up?
 
i tend to keep my knives shaving sharp but i only go up to a 400 grit when i work up the burr. i touch up my folder on the slotted paper wheel whenever it feels dull which might be once a month if that.
 
I keep all of mine razor sharp, except for my Bushman and Ka-Bar fixed blades. For all of my non-factory edges (I find factory edges are easy to refine), I finish sharpening with a 600 diamond stone, then strop really well with green compound on cardboard, then finish the honing with my smooth wallet.

I touch all my knives up with stropping & wallet at the end of the day when I use that knife.

Depends on the knife, it's steel, and how I use it. My EDC stuff is shaving sharp. I have work knives, yard knives, beaters and keepers. I strop and/or use photo printer paper on the nicest and sharpest. The harder use stuff might just see some ceramic rods as a touch up, and various grits of sandpaper as needed.

If I use something with any length, it gets touched up, quickly, no obsessing.
 
I get a little anxious if my knife isn't razor sharp: it is as if I fear that someone is going to test the sharpness of my edge, and find it lacking.

I generally keep all my knives hair whittling sharp as much as I can, and I switch out knives depending on which one needs touched up or stropping. Besides, I dry shave my 'burns every other day just so that I have an excuse for keeping my knives so sharp!
 
I generally keep mine polished and easily shaving sharp, they cut better that way dontcha know.

+1 i am very anal about my edges, After sharpening i play with the edge for like 10 minutes making sure there isn't even the smallest burr. It's a bit annoying really but i can't help it.
 
I touch mine up on a strop once they start to lose some bite.

I keep mine shaving sharp. Depending on how hard it is used, I touch it up on the sharpmaker fairly often. Like seelow123, I can't tolerate any sign of a burr.
 
i recently got a set of paper wheels.

i have no excuse for not having shaving sharp knives and that's how i keep 'em.

a quick run over the buffing wheel is all it takes and i'll strop my edc if i've used it at all that day.

Me too.. I will touch it up a few times a week with minimal honing for no reason other than the fact that I need something to do when I am watching TV
 
Sharp enough that they cut what I need to cut.:)
If it tears rather than cuts, it's dull.
Except for the kitchen knives...my wife would have no fingers if they were sharp (that's according to her).

I have heard that same statement a lot over the years from many different people. :)
 
They will shave going with the lay of the hairs, otherwise, it is back to the stones.
 
I'll typically sharpen up until it can cut free-hanging hair, though I won't bother resharpening or touching up until it tears paper.
