Infused Bourbon - Apple Pie Buffalo Trace

I'm not sure why I didn't think about posting here about this. I'm making some infused bourbon for the first time. I have able a 45 day soak on this first batch. It tastes like apple pie but its not as sweet as I envisioned it. I read that you can put some honey or agave nectar in to sweeten it up. Does anyone have an opinion on that. Soak time? Process?
 
Interesting.

Personally, I have neither infused whiskey nor have I tried to sweeten it. However, I don't see why a little bit of simple syrup couldn't do the trick.

I'm interested in hearing about your process and the end result.

Thanks for the reply. Well I tasted it tonight with some ice and it was the perfecgt sweetness without adding anything. So I strained it and bottled it up.

My Process was this

Cut and core up 3 to 4 apples of your choice. I used 3 Honey Crisp and 2 Granny Smith. I didn't peel my apples but after this batch I would highly suggest that you do. I guess the skin has some yeast in it that could affect the whiskey somehow. I'm not sure how but that is what I was told by a dude that does his own shine.

I then added one cinnamon stick and a half of vanilla bean that I split.

I put all of this into a 2 quart mason jar then added bourbon. I used Buffalo Trace bourbon but you can use your favorite. I just happened to be drinking Buffalo Trace these days. Seal up the jar and place in a cool dark area. Shake the jar once a day. The article I used called for a 30 to 90 day soak depending on the taste you are looking for. It suggested that you taste your bourbon as you go so you can adjust the cinnamon and vanilla to taste.

I checked back after I posted here and I was on a 70 day soak. I guess I didn't keep track of time very well. Once your bourbon has reached your desired taste strain the bourbon and re-bottle it.
 
Well now....they do knife pass around maybe we could all try your creation and do a commentary....the videos could be worth it. ;)
 
I'd put my prune-o against your bourbon any day.

Just kidding, and no, I've never been to prison! :p

I don't drink but that sounds great. :) :thumbup:
