Most of my kitchen knives I've got are garbage. But I have a nice Wusthof knife that is generally what I use. Now that I learned to sharpen it through advice gleaned from these forums, it is scary sharp (by my standards!) and is my main tool in the kitchen.

My wife doesn't care to use a big chef's knife though. EVerytime I look, she is using a 5" knife Wilshire staysharp knife we have. I can't even sharpen it since the design of the knife/sheath combo auto sharpens it. (and you can imagine the result)

That size seems to be most convenient for her. So I wanted to get something high quality to replace it. I saw the earlier thread and most recommended Victorinox. However I wanted to use this opportunity to get a nice looking Damascus Japanese knife. The two I found are:

Tojiro DP Damascus 4.5-inch Utility Knife
MASAMOTO Damascus 5.5" Petty

Any oipinion on either of these or advice on a different one to choose? I am OK with spending the MASAMOTO amount of money ($180), but would rather not if I could get something as high qaulity for less.

Thanks

You should be able to do darned well for that price, though of course requiring Damascus narrows things down considerably. Make sure you broaden your horizons beyond Amazon to include Japanese knife specialty places. I cannot vouch for Kohetsu, no experience, but I notice that they make both 120mm and 130mm Damascus petty knives in VG-10 for around $120. Japanese Chef Knives has a branded VG-10 5.3" petty, labeled Damascus but expressing it in layers on only part of the knife, with a nice-looking blue handle, for $98, and some other things to look at.

Just an update. I got the Tojiro DP Utility Knife and she loves it. Case closed!

Thanks everyone
