Recommendation? Kitchen knife making?

I have been looking at making kitchen knives for some friends, i have looked on amazon and found some 1/4 inch thick stainless steel. I know that 1/4 is really thick! what is a really good kind of thickness for a general chefs knife?
 
I like 0.110 for chef knives for smaller knives I like thinner. The thickest I would go is .125 but each is own I guess.
 
Paring knives at 0.080" or thinner. Those 1/4" slabs are useless unless you want to make a crowbar.
