The 2 paring knives have been SPF, Santoku still available!
The Santoku knife is one I have been using for the last month or so. I'm either cooking or help cook on Wed. nites at Church and I have used this knife to go through a lot of Tomatoes and other veggies! It has started developing a beautiful patina.
The new owner can choose to keep the patina or I can hand sand it back to a satin 600 grit finish, totally up to you.
Blade is .084 52100. THIN and SHARP! It's lightweight and holds an excellent edge!
Note: The last picture is one I took just after I finished it. (satin 600 grit hand sanded)

Blade length: 5 1/2"
Blade height: 1 1/2" at heel
OAL: 10 1/4"
Handles: Highly figured Desert Ironwood with Micarta pins

The two paring/bird & trout knives are of 3/32" 52100
Both are made from 3/32" 52100 high carbon steel from Aldo.
The White one has a thin flexible blade. It would make a good bird and trout knife or boning knife. I've had this set of scales around for years and have forgotten what they are but I believe they are Acrylester. Pins are 3/32" black micarta with red liner.
The Desert Ironwood blade does not have any flex to it. These scales have awesome color and depth.
Both knives are right at 7" OAL. The White one has a 3 1/2" cutting edge while the Desert Ironwood knife has a 3 3/8" cutting edge.
Both blades have been hand sanded to 600 grit. The cloudiness on the blades is RenWax.
