Hey all,
I've got a great little prep knife up for sale today. It's CTS-XHP steel heat treated to RC62. The handle is stabilized Amboyna Burl the ferrule is layered epoxy and the spacers are copper and black G10. The blade is full flat grind down to near zero before sharpening and hand finished to 600 grit. It's light as a feather and should make a great addition to the kitchen arsenal.
SPECS:
OAL: 285mm (11.25")
BLADE: 135mm (5.25") long, 32mm (1.25") wide, full flat grind with slight convex at the edge which is near zero edge before sharpening. 600 grit hand sanded finish. The spine and choil are rounded for comfort
STEEL: 2.5mm (0.09") CTS-XHP at RC62
HANDLE: Stabilized Amboyna Burl, layered epoxy ferrule, copper and black G10 spacers.
