KME and 8" Zwilling J.A. Henckels Twin Four Star II

How might a KME Model KF-D4 system, which ships with four diamond hones (140 extra-coarse, 300 coarse, 600 fine and 1500 extra fine), do with an 8" Zwilling J.A. Henckels Twin Four Star II kitchen knife which has an edge angle of 15° on each side and -57 Rockwell Hardness?

I have read that the KME has a minimum angle of 17° but that this is measured to the edge of the clamp and that lower angles at the edge of the blade are achievable. Is this correct and should I expect to be able to maintain the 15° factory angle on this 8" knife with the KME system?

Also, approximately what difference in edge angles would there be between the center and ends of the 8" blade with the KME KF-D4?

The other two knives I have in this set are 4" and 6". I expect that the edge angle along these blades would be more consistent but that getting down to the original 15° factory angle might be less likely. What do others here think about this?

And just in general, is this KME system appropriate for the knives that I already have?

Yes, its probably true, if the edge extends beyond the end of the clamp the angle is lower,
example
clamp angle (ex 1inch clamp length)
1.5 clamp length
2 clamp length

If you remove the screw that holds the guide rod pivot and turn the whole assy upside down you can get down to about 8 degrees depending on the width of the blade. I use it on my Santoku at 10 degrees with no issues at all.
