The only knife shop in Austin currently is called Knife Sharpist.
The selection they have is very limited, mostly lower end knives and decorative swords. They carry some BM, CRKT and Spyderco, but very little selection. They can order for you, but you can order for yourself if you're here.
Another option to try are the area gun shops like Red's or Cook's. They do carry knives, and while not an extensive selection it is at least better quality. Be prepared to pay retail or ABOVE retail in some cases.
Your best bet would be to wait for the weekend (20th and 21st) and go to the SAXET Gun show. It costs $5 to get in, but you can browse all day if you want. They usually have several knife dealers, and quality will range from China cheapies to Brend Customs. Turn your BS detector on high and have fun.
