Alan, my Stag still rules the roost but this black bone is really nice...I too was hesitant but glad I pulled the trigger:thumbup:

Actually bought the #83 in Stag to be my prime user, but it's just to pretty for some of the messier day to day uses. So, the black bone #73 looks to be the candidate for that job. Plus the slightly larger size should be better suited in the kitchen. That's 3 GEC's in two weeks from someone who resisted the pull for a long time. I realized they deserve the praise they get. Here is my contribution. A Chestnut 42 and some 83s. The stag is fat and hand-filling, and the blade on the stag is satin. The patina on the Ebony was from cutting a lime, and then playing around with a more layers of lime patina.

I'm totally smitten with the 83's (here is a video I did rambling about them https://youtu.be/t_s4jxFfJnw). I can't wait for another run of the 72s! Also I would love a Beavertail 83...
