Looking for a full grain leather notebook cover

I'm an engineer and attend a lot of meetings (have been for years) and always carry around a disposable notepad. I think I'd like to get a nice notepad soon, something about 5"x8" with a good source for paper refills. 2 questions:

Any recommendations on a think a nice thick leather cover, preferably made in the USA and more super expensive. I'd love undyed natural leather.

What paper notebook should I be looking at to keep inside the cover?

something with light green paper. It is less harsh to the eyes. In the days of manual calculations, Lockheed bought pads for the stress engineers that had light green paper so that it would not be so harsh on their eyes. They still had a bunch of them when I was there in the 80's.
 
I didn't love the way the Saddleback rear panel did not cover the whole back of the notebook. Any reason this is better than a full coverage cover:

Those are incredible! I'm more looking for w very simple cover (plain leather) with no seams aside from the edge. I'd prefer it in a nice light leather that patinas well. I'm thinking this type made of Horween by OleksynPrannyk:

Those are really nice! Have no idea of the cost, but I like them a lot!
 
They don't have much of a gallery that i can see. Am i missing it on their website? Would like to see good pics of their passport cases.

They are responsive over email. Here's a few pictures showing the inside of the notebook cover. The second picture isn't mine but shows off the interlocking pen loops fairly well. I also have one of their covers for a top spiral bound A5 sized pad that works very well.

Not as classy. But for function I prefer a stainless steel clip board. The pages stay under the cover then you lift one above the cover to write on while the others stay inside. Then some storage inside.

You are an engineer not a poet!
