My wife is attending another culinary school and this one said you had to buy their knife kit, she couldn't use her own. We just picked it up today and it is by Mercer Cutlery. I don't know much about this brand, but they seem decent for professional use. Anybody here have any experiance with them?

Mercer has a lifetime warranty and a very comfortable grip on the stamped line that your wife has in the set. The chefs knife is from the Renaissance line and is one of my favorite. If you have any questions in regards to the set let me know- I have a ton of experience with them.

Do you know what is the steel used in their knives? They have that "Superior High Carbon, No Stain German Steel " on their site, but I'd like to have more precise info that that.

Well it is X50 CR MO V15, nothing to be proud of, but a decent performer so far. I guess its good that I only have bamboo cutting boards. I would prefer 440C or better yet VG-10 for a reasnable price range set. Maybe I will make her a set with VG-10 knives this year. Maybe she will be able to sell these after she's done with this school. I will make sure to have her only use the ceramic "steel" I have on these.

Overall I find that the chef knife has an excellent blade shape, comfortable grip, and is decently thin. Thinner than my Henkels actually. I may pick up a 8" chef as a utility to round out this set.
