I'm very much in the same situation - love me some micarta but it's often hard to find.
As others have mentioned, getting custom scales for production folders is one option. Ripp's Garage Tech does micarta scales for Spyderco PM2, and there are a number of craftsmen on this forum who do the same for several Benchmade models.
As far as knives that come stock with micarta, the only one I can think of worth mentioning is Shirogorov, in particular their F3R model. At least amongst the models available through their US dealer, they only recently upgraded the F3 to include multi-row bearings (the F3R series), and so far it's only been available in carbon fiber and python micarta, which I'm not a fan of (looks like a weird skin disease...). I'm definitely interested in a green or natural micarta F3R, if they ever make it to the US.
There are a number of custom makers that work with micarta, who's knives aren't crazy expensive. Walter Wells and Tobin Smith immediately come to mind, and I'm sure there are others.
EnZo Birk 75 has a couple of micarta offerings. It's also a great knife.
Weird - I knew the Birk came in white paper micarta (which is too smooth to really give you the benefit of micarta, IMO), but I didn't realize there was an OD green canvas version until you mentioned it. Just ordered - thanks for sharing!
