Here are our three kitchen models. My dad and I make these starting with raw materials. Everything is done in house. We use some automation (cnc milling), as well as a lot of handwork. We leave fine milling steps on our blades. Each one is about .001" deep. Once buffed and polished, they lend a unique look and also help certain foods release better from the blade.
