I'm very new to knife sharpening, and I know Naniwa Pro is overkill, but I've kind of been obsessed with researching and trying this, so going for it

I recently bought the Naniwa Pro 600 based on review in this video
The plan is to have just two stones: 600 + 2000
But having done some more checking around, I'm wondering if I should send it back and get the 400?
e.g. 400 + 1000 + 3000
IF the 600 cuts faster than 400 (which some are clearly disputing), and I don't need any major chip work / reprofiling (I'd get an, I dunno, 150-250 for this?), then 2 stones may be sufficient?
