Nat Geo article on Southern Nepal

Legend has it that Buddha went to different homes and villages and people gave him different veggies for his services. And what ever he ended up with that day was his "bowl".
This bowl has rice with Tumeric and smoked paprika on the bottom olives, chick peas, bell peppers, onions...(white red and green), cilantro, black beans jalapeño peppers, tomatoes and avocados. We have put corn with it.
This might be off topic but Buddha was mentioned.
Thought I’d share.
BTW..this was our meal. Very healthy and you can create your own.

Nepal is on my bucket list. I have a feeling it will need to wait until the kiddo is grown before we go. The Mrs wants to visit ancestral europe first bouncing between Ireland, the UK, and Germany. That's going to take some coin.

Nepal would be a great adventure, I'm sure:)
 
Jake, a Europass and light luggage can make your Euro-tour a bit more of an adventure--in the good sense. Meandering a continent filled with different cultures can a charming sense of resilience and discovery. The idea of traveling by train may seem odd, but the Europeans have darned near perfected the experience.
