I am about to get a few good kitchen knives. I have heard a lot of good things about Shun. Does anyone have any firsthand experience with them - particularly the Shun Pro's?

Thanks

i don't have the Sun Pro sreies, but the few Shun kitchen knives i have r great. my mom even wanted me to buy her a set.

thanks for the info. Does anyone have any idea on how they compare to Henckels, Wusthoff etc... From what I've read, they seem to outperform them, but I would like to hear from someone with firsthand experience.

Thanks

We sell those Kai Shun knives and both Wusthoff and Zwilling in our webshop.
The cutting edge of the Kai Shuns is VG10 with a hardness of 62 HRC and sharpened about 15 degrees.
The damast steel outer layers give the blades toughness and look good too.
Both Zwilling and even Wusthoff don't stand a chance in cutting power.
And these are good knives in their own right.
Problem is that the Kai Shuns are quite expensive in Holland, more than double the price of a good Wusthof.

Shun Classic are the tops. I agree that they are quite expensive, though. The way I look at it, if you are going to drop the coin on a one-time buy that will last you for MANY years, go with the Shun. Wusthoff is a strong second, but once you handle and use the Shun you'll see what I mean. Amazing cutting ease, sharpness retention, blade thickness, and feel in the hand.

Appreciate the info. That helped me make up my mind. I am going to go with Shun over the other higi-end kitchen knife brands.

Thanks

Good choice, I will chime in I own a shun block and with the damascus Vg-10 blades and i lvoe them, hold a great edge and are a joy to use.(look great too)

I only own one shun blade, the carving knife.
Damascus version.

Working with it on anything is a dream, wether it's meat or veg.
The full set would be nice but I ain't got that sort of money.

I recommend them.
