Old meat carving set with stag handles needs some TLC.

My wife acquired a beautiful old carving set that has been neglected (unused) for a long, long time. The blade, hand ground Sheffield steel, needs sharpening but is in very good condition otherwise. The silver fork is in excellent shape. The stag handles are in perfect condition except they are very dark and the coloration on one handle has become much darker than the other. The knife is trimmed with fancy silver, including dime-size caps on the butt end of each handle.

Sharpening I can take care of. Polishing the silver is a simple task. The challenge is to bring the stag handles back to life in a way that brightens them and makes them closer to the same color. Is there a process for cleaning and brightening stag handles that I can perform, or should I have a pro refurbish this beautiful old carving set? Or, should I just clean the handles and accept the dark color like I would embrace the patina on an old bronze statue?
 
Try cleaning them with a Mr. Clean magic eraser. Those things work wonders. Nothing in them that would hurt the stag handles to my knowledge. Might try a small area first, and after cleaning, wash with some mild detergent to remove any left over chemicals if any. Good luck!

I just got handled a similar set to clean up. Any thoughts on cleaning and removing the patina and polishing the stag?
 
Polish the high spots on the stag, and use paste wax on them. Try not to get the wax in the grooves. If you do a brush (old toothbrush, shoe brush) will remove it.
