question about single edge blades

hi im new to this site and have a question that i hope that someone can help to answer. I was recently given a couple of Japanese style kitchen knives that i really want to use on a daily basis but im not a fan of the single or chisle edge that they have on them. My question is i would like to know if it is possible to take those knives and turn them into the western style where there is a blade on both sides of the knives. Is this possible to do and is it a good idea? If not what are the drawbacks to doing this? Thanks for any input that everyone gives
 
Could you describe the knives, and add pix? The reason I ask, is that there is sometimes confusion between real single bevelled, and strongly asymmetric double bevelled.
 
I dont have the knife on me it is at work, it is a deba style knife so i mean it only has one side. Im not a fan of using this knife to butcher fish, but i really love the way the knife feels, the blade size and would love to use this as a everyday prep knife. THanks for replying.

what is the difference in the single bevelled and asymmertic double bevelled. I really know abosolutly nothing about knife terminology just how to use them.....haha. rr

japanese asymmetric bevels would be the 3rd one from the left.

japanese single bevels would usually be the last one on the right.
 
I would add that a real single bevel has a slightly concave left blade, while a asymmetric double bevel has a flat blade, with a very small bevel.
With a single bevel some serious work is involved to "open" it, to remove some factory imperfections. Once that's done, maintenance is very simple, and easier than with double bevel Japanese knives.
As the edge is part of the whole geometry you can't change it fundamentally AND expect to perform well.
I would contact a reliable sharpener, as Dave Martell, Jon Broida or Korin, and see what they can do.
 
Read-up on the deba and understand its proper use.

No, you cannot change the grind and if it is not sharpened properly it will be ruined.
 
or just watch youtube videos. look for how to make sashimi or how to fillet a fish the japanese way.
