Recommend me a PROFESSIONAL Sharpening Service, Please!

I thought finding myself a professional knife sharpening service would be an easy task.
Oh, I couldn't have been more wrong.

I googled for "professional knife sharpening services" nearest me.
Found one about 20 minutes away, but he was only a "basic sharpener".
So I broadened my search to anywhere, everywhere, within the state. No luck.
Then I really broadened my search to anywhere, everywhere, within the US. Still no luck?!

I must've reached out to about two dozens "professional knife sharpening services" across the US. Not one of them could do a CONVEX edge on a knife. Am I expecting too much? Is CONVEX really that rare and difficult??

So next, I looked at some YouTube videos of sharpening CONVEX grind/edge. The one I recall watching was a video posted by The Apostle. He must be really popular because I found out the wait time for him to sharpen your knives and return them to you is like FOUR months?!

Looking for a professional knife sharpening/polishing services who can put a CONVEX edge on my secondary bevel within a reasonable timetable:

This is my last-ditch effort before I give up altogether so I am posting here.

Prefer to limit my search parameter to within the US so I don't have to worry about shipping my knives overseas.
 
Could look into the Work Sharp system and do it yourself (there's basic and fancier Ken Onion versions). It uses belts which result in a convex edge. I have the basic version and just recently sharpened a bunch of kitchen knives for my BIL...he was very happy with the results.
 
Agree. Josh does great work and is a very nice person. I have a knife packed and ready to ship tomorrow.

FYI, Razor Edge Knives was one of those two dozen services I've already tried.
I am sure Josh is a really nice person who is great at what he does ... but he told me so himself that he cannot re-profile my blade to CONVEX edge. And that's the reason why I came here to BladeForums, hoping at least one of you know of someone who is known to work with CONVEX-grind and/or CONVEX-edge. CONVEX CONVEX CONVEX!!!
 
If it's really important to you, is 4 months really that long of a wait time?
 
I recommend you learn to do this yourself. That will take some time and practice. Use some cheap used knives until you obtain the skills needed. Buy the book written by Wayne Goddard titled "The Wonder of Knifemaking". He discusses how to do the convex edge in the chapter about knife sharpening. All of his books are excellent reads. My best to you.

You are asking for a “re-profile,” that is not a sharpening job. Different category. That takes some time.
I suggest you learn how to do it yourself. Or drop the attitude.
Sharpening convex is pretty simple. Re-profiling to convex without loosing a lot of blade steel is trickier.

I said I don't do mirrored edges, I can do convex though. But convex doesn't get as sharp as a v edge. And getting sharper than a straight Razor is impossible due to the geometry (razors are 10-11 dps and extremely thin bte).
