My first thought is a Fallkniven, I like the F1 but it is thick. Any others that are good with a convex grind?

Make them that way. Free Hand sharpen on a stone. Learn it. It's a good skill to learn. The edge will naturally be slightly convex then.

Works great.

Others strop with a mouse pad to aide with shaping the edge

*that's my advice for your price range about. Less than $150.

There are some great makers here, but you might creep up on price somewhat

200-250-300 you can mostly get anything you Want, aside from some exotics

I also have a black Very Coarse stone for making deep scratches. :)

I think putting sharpie marker on your edges helps see what you are removing.
Get a good light. Maybe magnification
 
And I’d be happy to serve you. An email or two to dial in what you’re looking for and then off to the races. Here are the three most recent examples of what I have made in AEBL at that price range. They are 3/16” stock, but as you can see the grind geometry is built to cut and slice. Best of both worlds, ie strength and cutting power.

Was able to use the sharpie and get sharpen the edge up quite nicely on some diamond stones. Maybe beginners luck lol. I found a method that helps me to maintain an angle decently. How long do you have to freehand before it starts getting convexed?

When sharpening a convex edge I stroke backwards along the hone rather than edge forward. Works well on my F1 (VG-10) and SRK (Carbon V). The F1, while the blade is fairly thick at the spine, is flat ground and has a pretty wide taper, compared to a saber grind. I haven't noticed any binding with mine.

You are probably right there, in a microscopic level.
As the weeks, months, years go by, more and more.

Some days it might not go so easy.
Just take a break, leave it for another day.
Sharpening needs to be relaxed, not forced. Zen like.

That looks good. So since none of us are perfect handsharpeners its got some convex to it already. Secret to that and any other knife with decent hardness is don't let it get dull. Strop, straighten or touch up before then.
 
Doing very well thanks. She showed me a white board with all her calculations on it from Pharm class. I told her it looked like Einstein had been playing around on it at lunchtime.
