This is a refurbished Sabatier chef's knife for sale.
I purchased several of these vintage knives. I refurbish and rehandle them.
Most have cracked handles and are poorly sharpened.
I do this to bring new life to a vintage knife and it allows me to practice and learn new handle concepts and materials.
This is a high carbon steel knife and will stain and patina.
This one is a reground and thinned out and the handle converted to a hidden tang.
This one is very sharp and it benefits from regular steeling. If you steel this knife before use it will be as sharp as you will ever need in the kitchen.
The handle is a redwood burl with leather and copper accents.
The blade is left with a working belt finish. The bolster and heel is left as forged.
It is blade heavy with the balance point being almost an inch in front of the heel. This make it feel very lively with a pinch grip
